Evelyn's Famous Cheese Rings

 2 sticks margarine or butter

3 cups plain flour sifted

1 pound NY state sharp cheese

1 tsp red pepper

salt to taste


Let margarine and cheese come to room temperature and mix like biscuit dough with sifted dry ingredients. Mix until you do not see any pieces of cheese and put into cooky (sp) press and make rings. An easy way to make rings is to put straight lines of cookie dough across the cookie sheet. When the pan is full of ctraight lines, cut lengthswith a knife about 2-2/5 inches long and just flip the dough around in circles. This is much easier way to make uniform circles. Makes about 150 cheese rings. Cook at 400 degrees.
