1 pound ground beef--at least 87% lean
2 eggs blended with a fork in a cup first
1/2 cup salsa--I use mild
a couple of tbs. (tablespoon) of dried, minced onion
garlic powder and onion powder if you want
1/4 cup or so ketchup but you can omit this
salt--shake till it feels right or pour salt in the shallow palm of your hand--maybe a tsp (teaspoon)
pepper--shake until it feels too little
a long shake or two of Accent--powdered msg gives that umami flavor
crouton crumbs (use croutons, grind them up in the single serve cup on the ninja) maybe 1/4 cup. I've used more, but it makes the meatloaf more bready.
Squish it all together with a fork or with a gloved hand.
You can cook it in a loaf pan or a flat casserole. Spray first with Pam or something like.
Cook it on 375 for about 30 min. depending on the type of pan you use. Longer for the loaf pan, shorter for the flat casserole.
Check it after 15 min. to see if it's getting too brown on top. You can always lay aluminium foil over it to keep it from burning as quickly.
I don't put ketchup on top, but you can if you want. Or salsa. Or cheese at the end of cooking.
